How to cook Home-Made Chicken Essence / 自制鸡精 (Step by Step)

This is a home-made original chicken essence that I will make during my child’s exam period. Ganbatte! It is a relatively simple recipe which anyone can make at home, to show your love to your child and to give him/her your moral support during their exam. So, do try it out yourself! Health Benefits of Chicken Essence:- (1) Fights mental fatigue (2) Improves mental focusing and concentration (3) Improves physical performance (4) Suitable for enhancing children's brain development (5) Reduces stress, anxiety, irritability. (6) Strengthens the muscles (7) Controls blood sugar levels Tips: You may remove the chicken skin so as to avoid the chicken essence being too oily for consumption. However, I prefer to have the skin intact so that the drumsticks will still be soft and tender and I could use it to cook shredded chicken porridge! You may choose to skim off the top layer of oil if you like or even add a little bit of salt to taste. With just this one dish, it is enough to fill our tummy with a bowl of white rice each. So, I tried to replicate and it turns out, not too bad though. Do you usually wake up, having spells of sneezing, accompanied with a runny nose in the morning, due to Sinus / Sensitive nose? Sinus can be genetic. People with sinus are sensitive to dust, dirt and plant / flower pollen. In Singapore, sinus problems are more persistent than recurrent because of its tropical climate. Apart from eating Western medicine, keeping the house spic and span from dust and dirt, the other remedy would be to drink some Chinese herbal soup to build up the immune system. This Sinus / sensitive nose soup that I will be introducing, can help to build up our immune system, combat fatigue and reduce spontaneous sweating (eg sweaty palms or people who will still sweat profusely even during cool weather). 1. Health Benefits of Beiqi / 北芪 (Astragalus Root):- A super herb. It improves the immune system by strengthening the lungs and spleen. It improves Qi or Energy, warms the body and helps with water retention. This herb has anti-inflammatory properties. 2. Health Benefits of Baishu / 白术 (Atractylodes Rhizome):- A magic herb for longevity. It helps the digestive system, dispel pathogenic dampness, and restores energy balance. It is used to treat night sweating, edema, poor appetite, diarrhea, and to prevent miscarriages. 3. It helps to heal tissue and strengthen bones, tendons and ligaments that is weak or slow to mend after an injury eg having back, hips, knees and joint pain. There are many desserts out there. One of which I am going to show how to cook here is Bean Curd, Ginkgo & Barley Sweet Soup (腐竹白果薏米). You may eat it hot or cold. If you were to realise, when you eat this dessert outside, usually, the whole Ginkgo Nut is served and you might taste the bitterness in it. That is because they never removed the Ginkgo’s stem (embryo in the middle). So, if you were to cook yourself, please remember to remove it, if you want your dessert to taste good. The reason why we like this soup is because Ginkgo Nuts are one of the brainy foods. It is said to preserve memory, as well as to promote recovery from stroke. However, children should not eat more than five Ginkgo Nuts per day and adults should not eat more than eight per day. Over these limits can result in Ginkgo poisoning. Health Benefits of Ginkgo Nuts: - Reduce symptoms of psychiatric disorders and dementia - Improve brain function and well-being - Treat headaches and migraines - Improve asthma - Treat blood pressure - Improve circulation and heart health - Treat depression - Support vision and eye health - Treat sexual dysfunction - Reduce PMS symptoms - Reduce anxiety - Fight inflammation - Contain powerful antioxidants Tips: You may buy fresh Ginkgo Nuts or those vacuum packed Ginkgo Nuts. However, if you want your kids to drink this sweet soup, please do not skip the step to discard the middle stem (embryo) so as to remove its bitterness. Note: Ginkgo Nuts could lead to serious health complications if you are allergic or taking certain medications. People who are allergic to mangoes and cashews should not eat Ginkgo Nuts. Pregnant women shouldn't take Ginkgo Nuts too. PS: Do not buy the wrong beancurd sheet which is for frying of vegetables, cooking of soup or for braising purpose. Nothing beats a cold rainy day like a hot bowl of Herbal Bak Kut Teh. It is a Chinese herbal soup with Angelica Sinensis (当归), known for its warming properties. People, especially old folks, who have rheumatism, always feel cold, have cold limbs and sinus, would feel the body warm up after taking the Herbal Bak Kut Teh. It helps to energize our body too. Bak Kut Teh is commonly consumed in both Malaysia and Singapore. Personally, I prefer Herbal Bak Kut Teh, compared to those peppery Bak Kut Teh. When cooked, it fills the whole kitchen/house with aroma herbal scents. Today, I shall be introducing how to cook a vegetarian-style Bak Kut Teh by adding various types of mushrooms (superfood) etc. Health Benefits of Mushrooms:- - Shiitake: Tumor fighter - Oyster: Cancer and HIV fighter - Shimeji: Asthma and blasts tumor fighter - Enoki: Blood sugar and body fat in gut fighter Mushrooms can also help us to:- - protect our brain as we grow older - boost our memory - maintain our heart health - keep young - make our bone stronger - promote metabolism - prevent constipation and normalize bowel movements - provide us with a lot energy Tips: Choose the Herbal Bak Kut Teh from Klang (巴生) as it tastes nicer.
